Sizzling chicken and vegetable fajitas with rich mozzarella cheese

It's been a while Foodie Bee Hive friends. I hope you've all been keeping well and cooking up a storm wherever you are. I'm back with another Foody post and I'm looking forward to telling you guys all about it. As you might know if you've read any of mybprevious Foodie posts, I'm a fan of spicy food, so most Asian cuisine gets a huge thumbs up from me, but this time I've ventured to a different continent for inspiration - all the way to South America to Mexico which I was lucky enough to visit ten years ago.

So there you have it, it's Mexican night at Chez Ablaze, so now let me take you through the Ingredients and recipe anf hopefully you can have a crack at this one yourselves.

Sizzling chicken and vegetable fajitas with rich mozzarella cheese

Ingredients

500 grams chopped chicken or 3 good sized breasts
1 large red pepper
1 large onion
6 medium sized mushrooms
1 sachet fajita mix
teaspoon of olive oil (or vegetable oil or butter)
6 tortilla wraps (or taco shells)
Mozzarella cheese (or another cheese like cheddar)

STEP 1 - Add your olive oil to the pan and heat at medium heat, after around 1 minute add your diced chicken to the pan.

STEP 2 - At this stage, I like to get the Fajita mix onto the chicken before it starts cooking, this infuses the flavours into the chicken. I put approx 60% of the fajita mix on at this stage, ensuring to Sprinkle a little bit on each chunk of chicken. Simmer away for around 5 minutes, turning the chicken so that it cooks a little on all sides.

STEP 3 - Chop your red pepper finely and make a little ring of chicken and place in the middle and sprinkle a little of your fajita powder on top of the pepper, cook and stir for approx. 3 minutes.

STEP 4 - Now we move onto the Onion and it wasn't any old onion. This onion came home from school with our eldest son, who grew it at school, so it was extra special and he was delighted to see us using it in a meal. Chop the onion in half and then Chop each half finely.

STEP 5 - Again make a ring of what is in the pan and leave a circle in the middle and add your onion to the circle and sprinkle some fajita mix over the onions.

STEP 6 - Simmer for around 3 minutes. Now we can chop up our mushrooms.

STEP 7 - Again make a ring of what is in the pan and leave a circle in the middle and add your mushrooms to the circle and sprinkle the last of the fajita mix over the mushrooms.

STEP 8 - Simmer away for another 3 minutes and if at any stage anything in the pan is burning, add a little dash of water. Everything is cooked now, but to be on the safe side find the biggest chicken chunk and cut it in half anf ensure it is cooked through.

STEP 9 - Now it's time to heat your tortillas. I like to heat in the oven for 10 minutes wrapped in tinfoil, but for the time poor (*cough lazy) among us a 40 second zap in the microwave will also work! Now we are ready to serve. Place some fajita mix from our pan/wok in the middle of a fajita and top with sour cream and guacamole. I like to add some Mozzarella cheese as well.

All that's left to do now is to pour yourself a nice cold beer or glass of wine or an ice cold glass of Spring water and sit down and have a lovely meal with your family.
