Glorious sounding indeed! I used to love baking and eating shortbread as a child. I was really puzzled when I started your post. Dairy free? I thought. But of course there's no dairy! Just butter...............oooooooh!! Butter.............duh. Of course. It's been a long week. Can you tell?

Oh my, I hope your day today was less long that your week has been so far. And that you found a piece of shortbread to enjoy! The plant based butter I used in the shortbread really wasn't too far off the mark taste and texture wise, so I'm all smiles...well, for now anyway.
