•°✿❀❁✿❀❁✿❀✺✿❀❁✿❀❁✿°•

Hi everyone! Today I am going to participate in the Plant Power Cooking Challenge | Week #13 with a very special recipe Rice congrí.

When I emigrated to Cuba one of the things I have been able to enjoy the most is cooking. Among my favorites is rice congrí, which is the traditional dish of the island. It consists of cooking the beans with the vegetables and rice. It sounds easy, but for a Venezuelan who used to cook these ingredients separately, it is difficult to learn this new recipe so that the rice is just right.

After several attempts, I learned how to do it. And here today I present the recipe with my personal touch of Venezuelan cuisine that I carry in my blood.

-Chop in small squares the onion, garlic, paprika, sweet bell pepper and cilantro. We put in a hot frying pan a splash of oil. When it gets hot, add the chopped vegetables and let them brown.

-Then add the tomato puree and stir well. If you have fresh tomatoes you can substitute the puree for 2 medium tomatoes.

-We proceed to add the beans with enough broth where they were cooked, we calculate 4 cups of bean broth.

I love this dish, I've had the Cuban version a few times. There is nothing quite like the combination of rice and beans, perfect partners. The Jamaicans do a version of this with coconut milk, green onions, and fresh thyme, and also Indians have several bean and rice combinations that are lovely.

Your preparation looks lovely. I am from the USA, my family is Cambodian, and we live in Suriname in a Guyanese-Cuban neighborhood, and we also enjoy learning other countries' cultures and foods. Cuba is one of the few countries in the western hemisphere that gives Cambodians a no-hassle tourist visa.
