Local dish: Palm Oil Rice.

Today is another beautiful day. Yesterday, I made my first post here in this amazing community, also I happened to be the master of the kitchen and I decided the breakfast to be served. So, while doing it I took some shots on the different steps so as to show my hivians the recipe to prepare the meal, Beans with unripe plantain.

Today, my mum was less busy, so she took charge of the kitchen but got assisted by me. She prepared one of her favorite meals, palm oil rice.

Rice is a delicacy taken by a lot of people in the world.
It's a really special food in Nigeria, we have a lot of ways to make it.
Fried rice, made with chicken sauce, jollof rice made with tomato paste, coconut rice made with coconut milk, we take rice with tomato sauce, chicken sauce , some people take it with vegetable sauce too.

I had palm 🌴 oil 🪔 rice 🌾 with boiled egg for breakfast this morning, as the name implies, it's made from palm oil, that's extracted from a palm tree.

Ingredients used to make it are palm oil, crayfish, dry fish, salt, onions, pepper, seasoning cubes and pumpkin vegetables.

Let me discuss briefly how it is prepared 😉:
The rice is parboiled first , a little salt is added as it is parboiled, the rice is then filtered; the palm oil is fried,then you add your onions, pepper, crayfish and seasoning cubes, add a little water and leave it to steam a little, pour the rice into the pot, add some water enough to make the rice soft, add your boiled or fried fish.
When the rice is almost done, add your vegetables, just before the water in the pot dries up. Leave for some minutes to steam.
Your palm oil rice is ready.

N/B: I was unable to the take the step-by-step guide shots 📸 so that it won't seem as a distraction to my mum. If I was the one in charge of the meal preparation, all necessary step shots 📸 would have been taken. Please bear with me.

After everything was done, boiled an egg with some pears to enjoy the meal.

The meal was accompanied with a yogurt drink too 😉.
