Indonesian Traditional Snack – Uli Ketan ; Delicious and Philosophy


Glotinous Rice

Rice is one of the staple food of people in the Southeast Asian region. There are different types of rice which is commonly consumed and eaten, but there is one type of rice that is usually processed into snack or a traditional cake, that is glutinous rice. Different types of other rice, glutinous rice identical processed into a variety of snacks that are so delicious. Usually glutinous rice mixed with coconut milk and grated coconut, this blend produces food that is savory and delicious.

Glutinous rice is also very popular in Southeast Asia. I know there are several food made from glutinous rice from various countries in Southeast Asia such as kelupis of Sabah-Malaysia, Khao niao mamuang or Mango Sticky Rice from Thailand, and Suman from the Philippines. I believe 100% in Myanmar, Laos, Cambodia, Singapore, Vietnam, Brunei Darusallam, and Timor-Leste must also have the processed food of glutinous rice.


Uli Ketan

How about Indonesia ? if I was told to answer what kind of food made from glutinous rice, I might run out of time to think, because very much for the food or the cake from Indonesia that is made from sticky rice like this time, I will tell the one of a traditional cake of Indonesia which is made from glutinous rice and has a unique story and philosophy in the snacks, the name of the food that is Uli Ketan.

Uli Ketan is a traditional indonesian snacks made of glutinous rice. I get this food after coming at the wedding of my brother. A lot of terms naming of food such as in Central Java is known by the name Jeddah, or in Sumatra popular with the name of gemblong. Uli Ketan since the first is identical with a variety of big events, like wedding, eid day, or celebration event.


Philosophy Uli Ketan

Uli ketan is not only known as the traditonal food, but as a food that has a philosophical meaning in. First, the glutinous rice is closely related as a form of unity in a relationship like husband and wife relationship, family or community. Second, in the process of making uli ketan, we will feel the meaning of togetherness and simplicity. Men have to grind the glutinous rice that is already finished cooked until the texture becomes supple, and the woman on duty to cook and wrap the uli ketan this. Teamwork interesting isn't it ?

Why should the man pounding glutinous rice ? I've seen people make uli ketan and also try mashing the dough is sticky rice, and this work is draining physical which may be difficult to do by a woman. The process of pulverization glutinous rice should be up fine so uli ketan be enjoyed. The texture also later turned into a chewy and sticky. To collide them have to use a wooden pestle. In addition to the white glutinous rice, uli ketan also made with additional grated coconut and salt so as to make sense of uli ketan it more savory.

The process of making uli ketan which takes a long time, patience, and some people become a lesson for everyone so while living life to not easily discouraged and give up easily.


Don’t Over Eat

Uli ketan is my favorite traditional snack in indonesia and almost all my family know that I love food. Not Infrequently, when I was present at the wedding of the family, often provided by these foods when going home. However, the consumption of processed from rice such as uli ketan should not be eaten in excess or at a time that is not right.

Processed food from basic ingredients glutinous rice is good and tasty but we are advised to consume them naturally, and it is advisable not eaten in the morning, due to the consumption of sticky rice in the morning can make the stomach so heartburn and stomach pain, eating glutinous rice can cause acid reflux.

What is the name food of glutinous rice in your country ?

kelupis if at Sabah...but we always pronounce it as kolopis in Sabahan language😅

Oh, i see. In Indonesia, we had food namely Lupis and have triangle. Its look same name with "Kelopis"

I went to Bali and Jakarta last time but I did not get to try this. Maybe next time I will find it :D .Here have many variation of this, my favorite is the banana flavor.

Here in Suriname it's known as ketan too because of the Javanese influence here. It's not nearly as common to snacks made from ketan like in SE Asia, but also we haven't been to many restaurants because the prices are so high and the quality so low.

When're we're back in Cambodia we'll be eating lots of "damnaap," the Khmer word for sticky rice.

I know it’s so delicious snack and its smells very good! We have gluten rich or sticky rice with coconut like that too but we love to add jackfruit with this recipe. I really miss eating it.
