Your cookies are SO adorable.
I've never had a homemade cake that anyone called a Pink Cake, but there use to be some at the convenience stores when I lived in Texas and I loved them. They were rectangle Angel Food Cake and had icing with a firm consistency, kind of like zingers have now. I could never remember their name, but always called them Pink Cakes. mmMMMMmmmm....
Here is a photo of one. My understand is that these are no longer available.

I never found them anywhere anymore. Don't know these mini frosty angel cakes either.. the ones I know from childhood were with a hot pink icing not like I used this time. they didn't come out as I expected but I will give it another try next time :)
