Kerala Vegetable Stew

The Kerala vegetable stew is so simple to make, but don't be fooled by the simplicity of the dish, it is very filling and it tastes delicious.

Let's get started.

Ingredients:

Onions - 1
Green Chilies - 3
Cardamom - 1
Cinnamon - 2 small pieces
Carrot - 1 (cut medium size)
Beans
Green Peas
Potato - 1
Cauliflower
Mushroom
Coconut milk
Salt
Oil (I am using coconut oil)

Method:

Heat Oil in a pan. Add cardamom and cinnamon.

Once it turns arrogant, add mushrooms. (If you are not using mushrooms, you can add the onions).

Once the mushrooms get slightly brown, add the onion and chilies.

Once the onions get translucent, add potatoes and green peas. (I am adding green peas at this stage, since it the frozen dried green peas and takes a little more time to cook through).

Give it a stir and add 1/2 cup water. Let the potatoes cook half way through.

Add the carrot and beans and let it cook for a couple of minutes.

Add coconut milk. and salt. I am adding frozen coconut milk. I also added some desiccated coconut, because I didn't have much coconut milk.

Let it cook for 5 minutes. And add cauliflower. Since I am using blanched and frozen cauliflower, I am adding it after switching off the gas. Let it sit for a couple of minutes.

And that's it.

Thank you for your feedback. I appreciate it a lot.

I will elaborate more on the recipes I post.
I don't use social media much in terms of facebook or twitter. But this does give me good feeling that maybe I should be using them more. I'm not sure about FB, but twitter and instagram is something I will work on.
