Healthy , Tasty, And Traditional Vegetarian Dish You Can Try At Home

Dear all hive users, this time I would like to share my vegetarian recipe. It is one of the traditional dishes of Indonesia. It is called urap.
Urap is steamed or boiled vegetables with coconut grated as the sauce.

Here is the recipe of this tasty vegetarian dish, urap.

Ingredients
1/2 grated coconut
2 garlics
4 red onions (shallots)
1 cm Kaempferia galanga
2 bay leaves
3/4 chillies
2 cm galangal
1 cm shrimp paste ( you can use it or not)
Vegetables

  • Spinach
  • Cucumbers
  • Long beans
  • Pak Coy /Bokchoy or Brassica rapa.
  • Bean sprouts
    You can also add vegetables that are available in your country, like carrots and other vegetables.

Step 1

  • Grind chillies, shallots, garlic, kampfeara galanga, shrimp paste
  • Add with 1/2 or more tea spoons of salt.
  • Add 1/2 tea spoon of white sugar.

Step 2

Sautée the ground spices with vegetable oil.

Add the bay leaves and broken galangal.

Add the grated coconut and mix well. Dry fry the grated coconut with the spices until it looks light brownish and smells fragrant and dry.

Step 3

Boil all the vegetables. If you do not like boiled vegetables, you can steam them.

Serving Suggestion

Take all the vegetables on a plate and pour over the well dried fried grated coconut. Mix them!
It is time to enjoy the vegetarian dish with white rice, fried tofu, and fried tempe. If you are not vegetarian, you can eat it with fried chicken or fried fish.

NUTRITION
Spinach is a good source of iron, manganese, and vitamin C. Long beans have a lot of vitamin B1, iron. Pokcoy is a good source of vitamin C. Cucumbers are a good source of phosphor , calcium, and iron. Tempeh and tofu are good sources of protein and minerals. Those vegetables have a lot of fiber too.

Thanks, I think traditional dish is based on the nature. Vegetables are things that most people consume for years to lead a healthy life.

termakasih, the smell comes from the the dried fried coconut with kampfeara galanga. Both ingrediens are abundanttly available in our country.

I think Malaysian has a different type of urap with little difference of spices. We have some similiarities in cuisines.

I love the coconut and green vegetables. Looks delicious. I must try something like this. I have tempeh but the coconut is not fresh right now. I will used dry.
