PROOF OF BRAIN PHOTO CONTEST: FOOD
It's another #Pobphotocontest week and the subject is Food hahaha, who doesn't like food. I love food a lot especially home made and local /traditional foods and I will be sharing with you some of my country's popular foods. Happy reading.
EDIKA IKONG (VEGETABLE SOUP) WITH GARRI
Edika Ikong (Vegetable) is one of the special native soups of the Ákwá-Ibomites & Cross Riverians in Nigeria, but has been widely accepted in other tribes. Hardly will you attend any event in Ákwá-Ibom or Cross River without seeing Edika Ikong soup served. More so in my own tribe, Igbo, any event without this soup isn't yet complete. It's that serious. Some homes too have co-opted it into their menu.
As the name implies, vegetable like Ụgụ (pumpkin leaf) and waterleaf are used in preparing it. Not only that, there are so many other ingredients used, though depending on one's preferences and they are
- Mfi (periwinkle) especially that with the shell still intact
- Stockfish, Dry fish, smoked fish of choice
- Palm oil
- Assorted meat like beef, goat meat, shaki, pomo (cow skin) etc.
- Pepper, Salt, Seasoning cube of choice, Crayfish etc.
This soup do not require much water, Infact it's the stock from cooking the assorted meat, stockfish, fish etc that's used, and of course plenty palmoil to bring the color out.
I love them fresh*
As the soup consists of leafy vegetables, they are good source of Vitamin A, calcium and folate. Also it helps improve blood production and circulation, a natural immune booster.
If you are having difficulty in regular bowel movement, eat Edika Ikong soup.
The assorted meat, fish and stockfish in it are rich sources of protein, vitamins, minerals etc.
Edika Ikong is not only nutritious but nourishing to the body and can be eaten with any swallow of choice (which is a source of carbohydrate) like garri (as seen in the picture), fufu, pounded yam, wheat meal, semovita etc and you shouldn't miss out in eating.
I prepared this particular meal over the weekend and it served as lunch.
AGIDI WITH VEGETABLE STEW
Agidi is also another delicious and native food which virtually every tribe in my country, Nigeria, enjoy.
It is made from dried corn / maize, and can be eaten with chicken peppersoup, goat meat peppersoup, stew, vegetable sauce, assorted meat peppersoup, etc.
UKWA (AFRICAN Breadfruit WITH FRIED CHICKEN)
Aha! Ukwa is another food I love eating, and popular to the Easterners in Nigeria (Igbo tribe)
It is nutrious, delicious and healthy meal any day anytime. It can either be cooked or fried and eaten with palm kernel or coconut.
I also prepared this meal.

Do you know that edikong-ikong soup is one of my favorites. Though I dislikes garri, Everytime I cooked it, I wouldn't mind eating garri 4 times a day. 🤪 Please, dish some out for me naa.
