(Eng / Esp) Semi-dried tomatoes and chili powder

Good evening, dear readers and friends of the Plant Power (Vegan) community. Taking advantage of the fact that we are in season for tomatoes, chili peppers, onions, bell peppers and garlic; today I have returned with two simple but useful recipes: SEMI-DRY TOMATOES AND CHILI POWDER, and I always take advantage of when vegetables drop in price due to the harvest and the abundance of supply, and I process them to take into account the pantry the rest of the year.

Buenas noches, queridos lectores y amigos de la comunidad Plant Power (Vegan). Aprovechando que estamos en temporada de tomates, ajíes, cebollas, pimientos morrones y ajos; hoy he regresado con dos sencillas pero útiles recetas: TOMATES SEMISECOS Y AJÍ EN POLVO, y es que siempre aprovecho cuando los vegetales bajan el precio por la cosecha y la abundancia de oferta, y los proceso para tener en la despensa el resto del año.

Although I live in a tropical country, where the difference in climatic seasons is not so notorious, since we only have two climatic periods in the year, (of six months each): A dry period (summer) and a rainy period (winter). ), and throughout the 12 months there are always vegetables in the market; there are certain months, such as those from January to a large part of April, when the harvests of many products increase, and I like to make the most of this abundance.

Aunque vivo en un país tropical, en donde la diferencia de estaciones climáticas no es tan notoria, ya que sólo tenemos dos lapsos climáticos en el año, (de seis meses cada uno): Un período seco (verano) y un período lluvioso (invierno), y a lo largo de los 12 meses siempre hay vegetales en el mercado; hay ciertos meses, como son los que van de Enero a gran parte de Abril, en donde las cosechas de muchos productos aumentan, y me gusta aprovechar esta abundancia al máximo.

I made these recipes that I bring today almost three weeks ago, when I went out and bought tomatoes (3 kilos for $2, although now there are 6 kilos for $2) and also sweet chili (at $1 per kilo); for which I took the opportunity to process them, and thus I share the processes with you. Let's go with the first recipe.

Estas recetas que hoy traigo las hice casi tres semanas atrás, cuando salí y compré tomates (3 kilos por 2$, aunque ahora hay 6 kg por 2$) y también ajíes dulces (a 1$ el kilo); por lo que aproveché para procesarles, y así comparto con ustedes los procesos. Vamos con la primera receta.

THE RECIPE (SEMI-DRIED TOMATOES) / LA RECETA (TOMATES SEMISECOS)


Time, ingredients and equipment

  • Preparation time: It is a very simple recipe, but it develops progressively. The first part that consists of disinfecting the tomatoes; for this, I left them submerged in enough drinking water where I had diluted a spoonful of bicarbonate, for an hour; I previously washed them. After the time, I proceeded to rinse them very well (this stage is not reflected in the post, but it is a basic hygiene rule). Then comes the most laborious part, which is chopping them, this takes approximately 10 minutes, and then drying, which takes longer, and here I invested 6 hours in the sun and 1 hour in the oven. In total it would be approximately 8 to 9 hours.

  • Servings: I got approximately 600 grams of semi-dried tomatoes.

The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.

  • 1.200 gramos of plum tomatoes that are not so ripe, and that are small. They are not required so ripe, because we will not make sauce, and we need the pulp to be firm; and the smaller the better, because less time and heat are required to dry them.

  • 1 tablespoon of salt.

  • 1 teaspoon of onion powder

  • Napkins or absorbent paper.

  • Chopping board, knife, plates, protective mesh, baking tray, oven, blender clean containers to store the final product there.

Tiempo, ingredientes y equipo

  • Tiempo de preparación: Es una receta muy sencilla, pero se desarrolla de forma progresiva. La primera parte que consiste desinfectar los tomates; para ello, yo los dejé sumergidos en suficiente agua potable en donde había diluido una cucharada de bicarbonato, por una hora; previamente les lavé. Transcurrido el tiempo, procedí a enjuagarlos muy bien (esta etapa no la reflejo en el post, pero es una norma de higiene básica). Luego viene la parte más laboriosa, que es picarles, esto lleva unos 10 minutos aproximadamente, y posteriormente el desecado que ya lleva más tiempo, y aquí invertí 6 horas al sol y 1 hora en el horno. En total serían aproximadamente 8 a 9 horas.

  • Raciones: Obtuve aproximadamente 600 gramos de tomates semisecos.

Las cantidades de ingredientes que a continuación presento pueden variar de acuerdo al gusto y disponibilidad de cada uno de ustedes.

  • 1.200 gramos de tomates perita que no estén tan maduros, y que sean pequeños. No se requieren tan maduros, porque no elaboraremos salsa, y necesitamos que la pulpa sea firme; y mientras más pequeños mejor, porque se requiere menos tiempo y calor para desecarlos.

  • 1 cucharada de sal.

  • 1 cucharadita de cebolla en polvo

  • Servilletas o papel absorbo.

  • Tabla para picar, cuchillo, platos, malla protectora, bandeja para hornear, horno, licuadora envases limpios para almacenar allí el producto final.

THE PROCEDURE / EL PROCESO


Once the tomatoes are disinfected, we open them in half, and the largest ones are chopped into quarters. Those tomatoes that are deteriorated, we set them aside, cannot be included in this recipe. It is also important to remove the "eye" that each tomato has at one end, because sometimes this area is fibrous.

Ya estando desinfectados los tomates, los abrimos a la mitad, y los más grandes los picamos en cuartos. Aquellos tomates que estén deteriorados, los apartamos, no pueden incluirse en esta receta. También es importante quitar el “ojito” que tiene cada tomate en un extremo, pues a veces esta zona es fibrosa.

Next we cover a baking tray with napkins or absorbent paper, and we evenly distribute the tomatoes on that surface, with the internal part that has the seeds, facing up. Mix the salt with onion powder and sprinkle them well with this mixture.

Seguidamente cubrimos una bandeja de hornear con servilletas o papel absorbo, y distribuimos uniformemente los tomates en esa superficie, con la parte interna que tiene las semillas, hacia arriba. Mezclamos la sal con cebolla en polvo y los espolvoreamos bien con esta mezcla.

Next, we cover with a protective mesh and take to the sun. Here in the photos, you can see them in the internal garden of my house, on top of a chair, but then I put them on the roof, where they received more sun and therefore more heat. They stayed there for 6 hours.

A continuación, cubrimos con una malla protectora y llevamos al sol. Aquí en las fotos, los pueden ver en el jardín interno de mi casa, encima de una silla, pero luego los subí al techo, en donde recibían más sol y por tanto, más calor. Allí permanecieron 6 horas.

When I lowered them from the ceiling, I saw that they were still very humid, so I put the tray in the oven, with the tomatoes and the absorbent paper. There they were at 140 ºC for an hour. After this time, I removed them, and the aroma was EXQUISITE, the mixture of tomato with onion powder is an extraordinary duo.

Al bajarlos del techo, ví que aún tenían mucha humedad, así que introduje en el horno la bandeja, con los tomates y el papel absorbo. Allí estuvieron a 140 ºC por una hora. Transcurrido este tiempo, los retiré, y el aroma era EXQUISITO, la mezcla del tomate con la cebolla en polvo es una dupla extraordinaria.

These tomatoes can be stored in the fridge, either in glass jars or in plastic containers, I consider for a week, although at home they only lasted two days. They are ideal for making sandwiches, as a pizza topping, to flavor stews, or to eat on their own, I really liked them, it is a recipe that I highly recommend. It should be noted that tomatoes can be dried for a longer period of time, and kept submerged in oil, as @eugelys shared with us in a great post a few days ago.

Estos tomates pueden almacenarse en la nevera, ya sea en frascos de vidrio o en recipientes plástico, considero que por una semana, aunque en casa sólo duraron dos días. Son un ideales para hacer sándwich, como topping de pizzas, para darle sabor a los guisos, o para comerlos solos, a mí me gustaron mucho, es una receta que recomiendo ampliamente. Cabe señalar que los tomates pueden secarse por un lapso de tiempo más largo, y conservarles sumergidos en aceite, tal como nos compartió @eugelys en un estupendo post días atrás.

THE RECIPE (CHILI POWDER) / LA RECETA (AJÍ EN POLVO)


Time, ingredients and equipment

  • Preparation time: This recipe is also simple and practical. We start by washing the chili peppers well to remove the dust, and it is also prudent to disinfect them with white vinegar or with baking soda, although the chili peppers will carry more heat than the tomatoes. This initial process is approximately one hour. Then they are chopped in half, the seeds are extracted and the stalk they bring is removed, a process that will take 20 minutes. Later they are exposed to the sun, and to the oven. I exposed them to the sun for 10 hours (two days) and two hours in the oven at 140ºC; so in total it would be approximately 12 or 13 hours.
  • Servings: I got 30 grams of chili powder.

The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.

  • 350 grams of peppers. In Venezuela there are sweet chili peppers, that is, they are not spicy, although from time to time some that are very spicy sneak in, and this happened to me.

  • 1 tablespoon of fine salt.

  • Napkins or absorbent paper.

  • Chopping board, knife, baking tray, protective mesh, oven, blender or processor and a very clean glass jar, preferably sterile, to store the final product there.

  • Tiempo de preparación: Esta receta también es sencilla y práctica. Iniciamos lavando bien los ajíes para retirarles el polvo, y también es prudente desinfectarlos con vinagre blanco o con bicarbonato de sodio, aunque los ajíes llevarán más calor que los tomates. Este proceso inicial es de aproximadamente una hora. Luego se pican a la mitad, se les extraen las semillas y se les elimina el pedúnculo que traen, proceso en el que tardaremos 20 minutos. Posteriormente se exponen al sol, y al horno. Yo los expuse 10 horas al sol (dos días) y dos horas en el horno a 140 ºC; por lo que en total serían aproximadamente 12 o 13 horas.
  • Raciones: Obtuve 30 gramos de ají en polvo.

Las cantidades de ingredientes que a continuación presento pueden variar de acuerdo al gusto y disponibilidad de cada uno de ustedes.

  • 350 gramos de ajíes. En Venezuela existen ajíes dulces, es decir, que no son picantes, aunque de vez en cuando se cuela alguno que otro que sí es muy picante, y esto me sucedió a mí.

  • 1 cucharada de sal fina.

  • Servilletas o papel absorbo.

  • Tabla para picar, cuchillo, bandeja para hornear, malla protectora, horno, licuadora o procesador y un frasco de vidrio muy limpio, preferiblemente estéril, para almacenar allí el producto final.

THE PROCEDURE / EL PROCESO


Once the chili peppers are disinfected, we start by chopping them in half crosswise, to extract the seeds and remove the stem. We place them with the inside up, on top of the baking tray, previously lined with absorbent paper.

Ya estando desinfectados los ajíes, iniciamos picándolos por la mitad transversalmente, para extraerles las semillas y retiramos el tallo. Los colocamos con el interior hacia arriba, encima de la bandeja de hornear, previamente forrada con papel absorbo.

Then we sprinkle them with fine salt. We cover them with a protective mesh and bring to the sun. As with the tomatoes, here you can see them on top of a chair, but most of the time they were on top of the roof.

Seguidamente los espolvoreamos con sal fina. Los cubrimos con una malla protectora y llevamos al sol. Al igual que ocurrió con los tomates, aquí los pueden observar encima de una silla, pero la mayor parte del tiempo estuvieron encima del techo.

This photo is at the end of the first day, and as you can see, the peppers are moist, that is, they expelled liquid due to the heat and salt. The first day they were only 4 hours in the sun. The next day they were exposed to 6 more hours of intense sunlight. The next day I put the tray in the oven, at 140º C for two hours, and they were like that, really dry.

Esta foto es al final del primer día, y como pueden observar los ajíes tienen humedad, es decir, que expulsaron líquido debido al calor y a la sal. El primer día sólo estuvieron 4 horas al sol. Al siguiente día estuvieron expuestos a 6 horas más de luz solar intensa. Al siguiente día introduje la bandeja en el horno, a 140º C por dos horas, y quedaron así, realmente secos.

Once the chili peppers are dry, they are introduced into the blender or processor, and ground. I wanted to show you a photo while these chili peppers were being pulverized in the blender, but when I removed the lid from the glass, I absorbed the chili powder and sneezed non-stop for 5 minutes, so don't do that, it's a powder that will make you sneeze.

Ya estando secos los ajíes, se introducen en la licuadora o procesador, y se muelen. Quería mostrarles una foto mientras estaban siendo estos ajíes pulverizados en la licuadora, pero al retirarle la tapa al vaso, absorbí el polvillo de ají y estuve 5 minutos estornudando sin parar, así que no hagan eso, es un polvo que les hará estornudar.

This chili powder is recommended to be stored in a sterile glass jar, and it is very useful to flavor our recipes: Stews, salads, grains, etc., and since I added salt in this recipe, it is necessary to take into account that it is also used for to salt, it could be said that it is a chili salt. Its smell is incredibly accentuated and its flavor too, with a little we add a lot of flavor to the preparation.

Este ají en polvo es recomendable almacenarlo en frasco de vidrio estéril, y es muy útil para darle sabor a nuestras recetas: Guisos, ensaladas, granos, etc., y como en esta receta adicioné sal, es necesario tener en cuenta que también sirve para salar, podría decirse que es una sal de ajíes. Su olor es increíblemente acentuado y su sabor también, con un poquito aportamos mucho sabor a la preparación.

I thought it would be a great idea to turn tomatoes into a quick serving when making pizza. Or preserve tomatoes so that they last longer if they are stored properly.

Very creative, I like the way you dry the tomatoes by covering them with mosquito nets so they are safe from insects and other dust materials.

It's interesting to see that there is a harvest time somewhere in the world. We haven't even planted our tomato and pepper plants in the garden yet.

It's the first year that I have a garden and I wondered how to protect my harvest while drying. It's a great idea with that cover and I will for sure use it 🙂

These tomatoes were sown in October, so that when it is November and December and the temperatures are higher, the flowers can self-fertilize. If they are planted in another season, the flowers are born deformed and do not self-fertilize. So between February and March there is an abundance of tomatoes. This is one of the few vegetables that is produced in the area where I live, because it is very hot here all year round.

Pues aprovecha y convierte los ajíes en polvo, eso sí, cuando los vayas a moler, usa un tapabocas o evita abrir el procesador o licuadora inmediatamente después de molerlos, porque de veras, hace estornudar. Los tomates quedaron geniales, pero creo que gran parte del sabor se los dio la cebolla en polvo. Saludos.

Yes, tomatoes dipped in olive oil, with other herbs, are delicious.

The paper that I used in both processes is blotting paper, absorbent paper. Although it may seem incredible, where I live I can't find the parchment paper that is used for baking, the one that comes waxed; but to dry the vegetables, this absorbent paper and napkins also serve you.
