(Eng / Esp) Two spreads

Greetings again, dear readers and friends of the Plant Power (Vegan) community. Today I have brought a double recipe, or rather, two recipes. It is about the preparation of two spreads or creams, which can be very useful, especially when there is a celebration at home, or we simply want to have something delicious to accompany the bread, cookies, tortillas, etc.

In my search for recipes, I came across a potato spread, which can also be used as vegan cheese, so I decided to replicate this recipe, experiment with it. The other preparation is a cream, the well-known eggplant cream, which I have prepared dozens of times. I wanted to make these two spreads to keep them in the fridge, and because I would like to enrich other dishes with their use; however, I prepared a small amount of each one, since the maximum that these spreads can be kept is for a period of four days.

It should be noted that the amounts of ingredients that I used in each preparation can vary according to your taste. In my particular case, I think I exceeded the use of salt, however, in the list of ingredients I made the necessary adjustments. So let's see the first recipe.

Time, ingredients and equipment

  • Preparation time: This recipe is simple. The longest process is cooking the potato, so depending on the quantities, a maximum of 30 minutes may be required.

  • Servings: I got 150 grams of spread.

The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.

  • 100 grams potatoes.

  • 50 ml of vegetable oil, (I used olive oil, you can use the one you have at home)

  • ¼ teaspoon salt.

  • 5 grams of garlic.

  • 5 grams of garlic chives.

  • 1 lemon or lime.

  • 200 ml of water for cooking the potato.

  • Sufficient water for the washing and rinsing processes.

  • Pot, chopping board, knife, plates, blender or processor, etc.

Tiempo, ingredientes y equipo

THE PROCEDURE / EL PROCESO

We start by peeling and chopping the potatoes into small squares, the smaller the better, because this speeds up the cooking time. Once the potato is chopped, it is brought to medium heat with water that covers it until it is very soft. Tip: If the potatoes are not organic, discard the skins, do not compost them or feed them to animals, as they usually contain traces of agrochemicals.

It is good that while the potatoes are cooking, you cut the garlic and chives and disinfect it by soaking it in water with vinegar for at least 20 minutes (30 minutes is ideal). Drain and rinse very well. Booking. Also take advantage and squeeze the lime or lemon. Reserve the juice. Also peel and chop the garlic, and reserve it.

Once the potatoes are cooked, put them in the blender glass along with part of the cooking water; then add 10 ml of lime or lemon juice, salt (remember to be careful with this ingredient), garlic and garlic chives, and finally the oil. Blend on high speed for one minute.

Check the texture of the spread, if it is too thick, you can add a little more of the potato cooking water or some additional oil. This spread has a somewhat elastic consistency, but then it hardens. Remember that you can vary the ingredients, for example reduce the amount of garlic, remove the garlic chives, everything is to your liking. It is a flexible recipe. This recipe can be served as vegan cheese and combines with breads, cookies, tortillas, etc. To preserve it, store it in a sterile glass jar in the fridge.

Time, ingredients and equipment

  • Preparation time: This recipe is simple. The longest process is that of cooking the aubergine directly on the stove, it may take a maximum of 30 minutes.

  • Servings: I got 200 grams of spread.

The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.

  • 180 grams of eggplant.

  • 75 ml of vegetable oil, (I used olive oil, you can use the one you have at home)

  • ¼ teaspoon salt.

  • 5 grams of garlic.

  • 40 grams of sesame seeds.

  • Sufficient water for the washing and rinsing processes.

  • Pot, chopping board, knife, plates, blender or processor, etc.

Tiempo, ingredientes y equipo

THE PROCEDURE / EL PROCESO

We begin the preparation, placing the eggplant (previously washed), over low heat, directly on the stove or grill. We must rotate the eggplant frequently, so that it cooks evenly. Leave it until it softens in its entirety and it is observed that it is cooked inside. Then place it in a container or plastic bag, so that it expels moisture and the skin comes off more easily.

Simultaneously take them to fire under the sesame seeds, stirring them carefully so that they brown. Care must be taken that they do not burn. If you have tahini, you can skip this step. Since I didn't have any available, I opted for the sesame seeds, which, already being toasted, I put them in the blender to pulverize them.

After 10 minutes have elapsed, we proceed to peel the aubergine, which is very easy, since the skin comes off very easily. We put it in the blender glass, together with the pulverized sesame seeds, and then add the salt (be careful with this ingredient), the garlic (you can increase or reduce its quantity), and the oil. Mix at high speed for one minute. Check the consistency, if necessary add more oil to make it more fluid, do not add water, just oil.

This cream is delicious because it tastes like smoked eggplant, with the flavor of sesame seeds that gives it a unique touch. It can also be served with bread, cookies, cassava bread (casabe), etc. Store in a sterile jar in the fridge for up to four days.

Here I end my post for today, in which I have offered you two simple and cheap options for spreads. I hope you are encouraged to continue making vegan recipes, which are delicious, nutritious and compassionate with Mother Earth.

True, cream is sometimes needed for family occasions. And today you have shared a great idea to make it with simple and cheap materials. Both turned out great, but I found the eggplant one more appealing because I like eggplant more. !DIY

The eggplant one has a great flavor, and with sesame seeds it is even better. You can reduce the amount of garlic, I add that amount because I like strong flavors. Thanks for your visit, greetings @semarekha
