Carrots are one of our favorites vegetable to grow. Some years they do very well while other years not so much. I've found out that the more sun they receive the better. Not only are the carrots great to eat, the green foliage is great stuff to juice. We add a few apples in with some carrots and carrot tops and what a wonderful nutritious drink.

This year we harvested a bumper crop of carrots. Thinning them when they reach 3 inches does take some time but is totally necessary if you are looking to get a good yield

Oh wow... These are amazing produce you've got!

And I gotta admit, I didn't know the foliage can be juiced. That's a new learning! So thank you lots for sharing :) The thinning is necessary indeed if we want bigger and better yield. I learned that having them too close with each other isn't good.

In the past, I found it hard to pluck out so many vibrant young seedlings. This year we thinned like crazy and got the best harvest in the last 6 years. I'll be thinning like crazy from now on!
