I want to share with you this recipe to make raw dragonfruit cake, and also share this for Qurator's: Hive Top Chef! | No-Bake Cake.
This recipe I learned from chef @justinparke nearly five years ago, but I am not an expert like Justin. It’s tasty and a beautiful color from the dragonfruit. I love to eat it more than other cakes.
👩🍳 Raw Dragonfruit & Cashew Cake (Ital) Recipe 🔪
Ingredients For Crust
- 1/3 cup roasted peanuts
- 1/3 cup dates (seeds removed)
Normally I use raw peanuts, but today I wanted to roast them, and it’s more delicious than raw peanuts.
Grind peanuts and dates well and put in a container and smash with a glass like me.
Ingredients For Cake
- 1/2 of a dragonfruit
- 1 1/2 cups cashews (roasted already)
- 1/3 cup coconut oil
- 1/3 cup coconut milk
- 1/3 cup brown sugar or to taste
- 2 tbsp lemon juice
Normally I use raw cashews but I can only find roasted cashews. Here it's difficult to buy raw cashews and they are too expensive.
Grind cashews very well, then cut dragonfruit and put in grinder. Add coconut milk, coconut oil, sugar and lemon juice, then grind them well.
After pour it on the peanut/date crust and smoothe it. Then put it in freezer until hard.
I made this cake yesterday evening and this morning I made a little bit of coconut milk glaze for the top. After I take it outside freezer and cut for to take pictures of.
I think I just cut it for pictures and I will keep it in the freezer for later because it’s not for breakfast but my girls wanted to eat right away.
AT first I give them a little bit for taste and put it in the freezer, but after they taste, they wanted to it eat again and again. I talked too much to them but they still said, "Please Mom!"
I tell my husband, "You need to eat now, and if you don’t eat it, your kids will eat it all." So we are too tired to talk about this again and we eat all the cake this morning.
