I'm with you when it comes to asparagus. Especially asparagus in Germany when in season, but "aspara-bacon" is also a tasty hot-plate dish here in Japan.
Okra - I tolerate it and eat it if its on my plate.
Asparagus & okras are a good choice.
But macaroni & cheese ain't vegetables.

I grew up in Indiana, so I have to say corn. Sweet corn, popcorn, grits, cornbread...
Umm, everything corn? We count them as cereal here, and not veg. But it would be very innovative of you to use popcorn as veg :)
Sweet corn is served like a vegetable. Boil or grill corn on the cob and serve with butter and salt. Then there is corn for feeding livestock, popcorn, etc. Universities like Purdue spend a lot of time breeding different types of corn.
Carrots may be my favorite especially with some ranch dressing nearby
