Many of may you many know that one of my many Hive hats is serving as an Admin for NaturalMedicine.io, publishing the Plant Power Curation, and managing the new @LotusShares Plant Power Weekly Cooking Challenge.

In this role I get to discover the best of Hive's #PlantBased recipes and related posts. After months of curating the finest vegan fare Hive has to offer, five particular chefs stand out in my culinary mind, and I would like to share them with you and and show you why should follow them.

Even if you aren't a vegan yourself, think there is still plenty of culinary inspiration to be found within these chef's recipes posts.

Chef of the Great North

Β  Β  Β This Canadian chef doesn't let her latitude stop her from making spicy and delicious dishes bursting with flavor. Don't put this chef in a box; she can make a mean Thai curry just as well as she can whip up a mean vegan Caesar salad.
Β  Β  Β She spends her days working in a restaurant, but somehow still finds time and inspiration to share her after hours culinary adventures with us, and for that I am grateful. Take a look below and you will see just a small example of what she literally brings to the table.

Culinary Portfolio

Atlanta's Fittest Chef

Β  Β  Β Moving south and into collard greens country, chefery is just one of many skills this personal trainer possesses. That's right, this chef is a fitness guru, and although health is a priority for her, she's been to known to share some some slightly sinful edible treats with us too.
Β  Β  Β She loves working with seasonal fruits and vegetables, and has access to a wide variety of ingredients due to Atlanta's multi-cultural makeup. Whether making Mediterranean dishes or soul-food reimagined, she never ceases to amaze me with her creativity in the kitchen. Read one of her recipes and you're likely to find a surprise short uplifting story too.

Culinary Portfolio

Master Balkan Baker

Β  Β  Β This chef is still a bit of a mystery to me, but her talent in the kitchen is very obvious. I'm not actually sure if she is of Balkan heritage, but she shares lots of recipes from this area, and she loves to bake all kinds of beautiful things.
Β  Β  Β Although this chef doesn't stick to one type of cuisine, her Mediterranean, Balkan and eastern European foods are the most tempting. If you want to work with flour, you're sure to find plenty of ideas from this chef's recipe posts.

Culinary Portfolio

Inspiring Indonesian Chef

Β  Β  Β Sometimes I am not sure if I would rather eat this chef's dishes or mount them on the wall and enjoy them as art. She enjoys photography and plating just as much as cooking, and you can easily see that in her posts, which are full of vibrant colors.
Β  Β  Β If you want to learn how to use tempeh in more creative ways, this is the chef to follow. That's not all though, you're just as likely to see appealing recipes for desserts, snacks, smoothies, and more. Just look at all the amazing colors below!!

Culinary Portfolio

Can-Do Cambodian Chef

Β  Β  Β This chef is my wife, so I get to enjoy every one of her creations in real life. We are actually both chefs, and used to have an Ital restaurant in Cambodia, where we combined Southeast Asian, South Asian, and Caribbean flavors in the form of a daily thali.
Β  Β  Β Khmer and Thai cuisine reimagined in Ital versions are her specialty, but she is very good with Indonesian, Chinese, and some Burmese dishes too. Give her a coconut and a sharp knife and let the magic happen. Sour, salty, sweet, spicy, and savory can all exist in one dish, and this chef knows exactly how to pull it off in so many ways that it's mind boggling.

Culinary Portfolio

I've added each of these 5 chefs as a small beneficiary of this post. This is my small way of saying thanks for all the delicious food they provide me every week.

Blushing over here. Thank you for such kind words, and the honor of being included with these other amazing ladies. It's especially high praise knowing what a good cook you are, as well! There are definitely times where I don't have much time to post or get around as much to interact with everyone, but I always come back when I can because of all you lovely Hive peeps who I enjoy so much! Cheers to many more vibrant plant-based recipes for many years to come!

If you're blushing then my work is done here. I am getting a bit busy too, and I wish I wasn't as rushed when I make my posts lately. I just wanted to promote five of my favorite Hive/NM chefs, and you had to be on that list.

These foods look delicious. What do you think about the health effects of cooked food?

Some food delicious without cook like salad but some food needs to cook for delicious more. All the people can’t eat salad all the time or every day.

So you think we can't eat delicious food every day without cooked food.

I do not mean like that, I would like to mean we need to eat fresh food and cook food also for our life. If you like to eat fresh food every as you like. 😊

If you like to eat fresh food every as you like.

So we can live only with raw food. Then why did you say

we need to eat fresh food and cook food also for our life

Aren't these claims contradictory?

Hello @askmihai! As @sreypov mentioned, there are actually some foods that have higher nutrient levels when cooked. Tomatoes, for example, have more lycopene after cooking and the beta carotene in cooked carrots becomes more easily absorbed. kidney beans can be toxic raw, but cooked they become a plant-based protein powerhouse. Other items may be better to eat raw to retain Vitamin C and whatnot, but ultimately I think for most people they just need to do their best with what they have access to!

Tomatoes, for example, have more lycopene after cooking and the beta carotene in cooked carrots becomes more easily absorbed.

Do you think you can back up this claim with evidence?

Plus, foods that are not easily digested when eaten raw might make some people question whether they are actually good for humans in the first place.

Cooking Tomatoes Boosts Disease-Fighting Power - Cornell University - April 23rd, 2002 was published by a respected university in the USA, and it explains in detail what @plantstoplanks has described.

There is some much nuance in food chemistry that a yes or no answer can't simply be given, and each individual food must be assessed. Cooking one thing may destroy certain nutrients while boosting the uptake of others, but one clear danger of cooked foods is the heat.

I took a bite of curry fresh off the stove the other day, and that was clearly a mistake because it burnt the roof of my mouth, so there is one example of a negative health effect of cooked food.

Haha, that is one aspect of consuming too hot of food. And thank you for sharing the link to the article. I also agree there is a lot of nuance to it, which is why I enjoy lots of both cooked and raw vegetables daily to try to get all the nutrients I need. ;)

I do wish I could find more time to share my own recipes, but I always find myself rushed when it's my turn to cook. You are a legendary chef and deserve your spot in my top 5.
