Hello there, I made a vegan papaya pickle with toasted rice powder to share with you all. Normally, this recipe is made with fresh fish or fresh shrimp, but I make Ital food, so it is a vegan recipe.

It’s delicious like papaya pickle I've ate before. This pickled papaya is my favorite, I have not eaten it a lot time already. This is another dish I share with, hope you enjoy it.

👩‍🍳 Pickled Papaya With Toasted Rice 🌶️

Ingredients

  • 1 little bit ripe papaya
  • a little vegan shrimp paste or (about 50g)
  • 1 piece galangal, or as we like
  • red and green chilies to taste
  • 6 tbsp toasted rice powder, or as you like
  • 1 tbsp + 1 tsp salt for put on papaya
  • 1 tsp salt for put in vegan shrimp paste
  • 4 tbsp brown sugar or taste
  • 4 tbsps water

I cut vegan shrimp paste small, then mix it with 1 tsp salt. After I steam it 10 minutes, then I cut galangal small or crush it, well it’s the same.

Then I toast rice until brown and crush or grind it. If you like more spicy, you need to cut chilies. If you don’t like spicy, don’t cut chilies.

👉🏼 Normally, this recipe is made with fresh fish or fresh shrimp, and after we add salt we keep it two days, then we mix it with papaya. This recipe is my idea to steam it because I don’t like to eat fresh vegan shrimp paste.

I peel papaya and remove its seeds after I wash it, then I cut it like this. After I add 1 tbsp + 1 tsp salt, and mix it up well. I keep it over 15 minutes, then wash with water and filter the water away.

Heat pan and pour a little water, then add brown sugar and stir it until very brown, then pour 4 tbsp water and stir little and turn off the stove.

Add all ingredients and mix together very well.

Then put it in a box or jar, close the box well and keep it two to three days. Taste it, if you like a little sour or add more as you like to eat it.

After two days we can eat them, its taste is a little bit sour. We ate it two times already and when we can’t eat all we need to keep it in refrigerator. Have a beautiful day everybody.

Estos sabores para mí son extraños, pero no por ello menos interesantes. Veo que utilizas la papaya no del todo madura. No he probado la pasta de camarones vegana, debe ser interesante su sabor. No conocía la galanga, supongo que es famillia del gengibre, ¿su sabor es similar? Tu plato ha quedado muy bello, cortaste la papaya de forma muy bonita y está genial la idea de servirla en hojas de plátano. Como siempre, tu post es muy instructivo y tiene bellas fotos. Your food ALWAYS is so full of flavour and beautifully presented! How I miss our papaya trees that fell over as the papayas from tge fresh market is not as nice. I'd love to taste this pickle!
