In The Kitchen With Kat-A Breakfast Experiment

This morning, after extracting my carcass from bed and stuffing my feet into my barn boots, I was greeted with this scene as I went out to do chores:

Hmm...


The reason the picture looks a bit fuzzy is because the heavens are dumping snow on our part of the world like powdered sugar sprinkled from a barista's favorite garnish shaker.

Upon arriving back to the house looking like I had a dandruff problem, I decided I needed a cozy breakfast. Something warm, yummy, and made with a yam.

That's right, this lump of complex carb goodness has been sitting on my counter all week, and it deserved to be crafted into something tasty.

So, the first thing I did was wash the yam, poke far more holes that was probably necessary in the tuber, and chuck it into the air fryer. For the thirty-five minute cooking time necessary for tasty yamness, I sat next to a crackling fire and sipped cocoa coffee. The morning was shaping up nicely.

After the yam was done and cooled a bit (I got sorta wrapped up in my morning reading), I went to my cupboard and got out some stuff.

Now my original plan was sort of like a sweet potato smoothie. Something dairy-free and sugar-free that tasted a bit like yam pie filling or something.

I started by getting out the Magic Bullet, my daughter's little smoothie blender gadget. It works great for single serving blends.

Into the little bullet chamber I poured a bit of almond milk (I think coconut would be divine too, but alas, didn't have a carton and didn't feel like opening a can).

Next I added a heaping bit of yam chunks, some Orgain chocolate flavored plant protein powder, some peanut butter powder, and a smidgen of my homemade pumpkin pie spice.

Then I commenced blending.

The result was not a smoothie at all, more like a luscious mousse or pudding.

And it was so, so yummy!

It reminded me of sweet potato pie filling, but without all the inflammatory ingredients. I poured the taste bud pleasing ambrosia into my super classy Medieval Times wine tumbler and snapped a picture of my awesome breakfast before devouring it.

I will say though, this concoction is super rich and filling. I still can't believe it doesn't have any sugar in it, but yams are pretty sweet on their own, not to mention my protein powder does have stevia in it.

Regardless of its compositional makeup, I was just happy to eat something for breakfast that distracted me from my dairy mourning process. Not gonna lie, I miss cheese.

But if I keep whipping up things like this Yam Smudding (Ploothie? lol!) I will probably survive the cheese-free life with a smile.

Yam Smudding

Heaping 1/2 cup cooked yam
1/2 cup unsweetened almond milk
1 scoop chocolate protein powder (I used Orgain and I am sure vanilla would be yummy too but chocolate was what I had)
1 TBSP peanut butter powder
1/4 tsp pumpkin pie spice

Add milk and the remaining ingredients to a blender.

Blend until well combined, I used a Magic Bullet for this single serving recipe and I shake the ingredients before I blend them.

Scrape Smudding into a glass or bowl and devour!
