Family Recipe: Passion Fruit Liqueur

Me encanta el licor, para muchos puede ser sorprendente, para otros no es ningĂșn secreto, y es que siempre he mencionado que soy una persona que le gusta tomar toda clase de bebidas alcohĂłlicas, sean costosas, econĂłmicas o de dudosa procedencia lo cual es super gracioso de mencionar. Mi mamĂĄ tiene una receta de licor que me encanta, el nombre original es "Guarapita de Parchita" pero no se como traducir esto, espero que me entiendan con mencionar que es un licor a base de parchita. Esta receta es de la familia, pero mi mamĂĄ es la mejor haciĂ©ndola, asĂ­ que les muestro el proceso de esta exquisita bebida.

I love liquor, for many it may be surprising, for others it is no secret, and I have always mentioned that I am a person who likes to drink all kinds of alcoholic beverages, whether they are expensive, cheap or of dubious origin, which is super funny to mention. My mom has a liqueur recipe that I love, the original name is "Guarapita de Parchita" but I don't know how to translate this, I hope you understand me by mentioning that it is a parchita based liqueur. This recipe is family made, but my mom is the best at making it, so I show you the process of this exquisite drink.

  • Ingredientes:

Solo necesitaremos 3 productos para hacer esta receta. Empezando por el licor, utilizaremos una botella de 1 litro de Ron Blanco, preferiblemente con 40 grados de Alcohol para que quede mucho mĂĄs puro. Obviamente necesitaremos Parchita, para una botella de un litro se necesita 1 kilo y medio de parchita, esperando que tenga bastante pulpa por dentro y que la concha este lisa. Por ultimo necesitaremos unos 600 gramos de azĂșcar, para endulzar esta bebida.

  • Ingredients:

We will only need 3 products to make this recipe. Starting with the liqueur, we will use a 1 liter bottle of White Rum, preferably with 40 proof alcohol to make it much purer. Obviously we will need Parchita, for a one-liter bottle we will need 1 and a half kilos of Parchita, hoping that it has enough pulp inside and that the shell is smooth. Finally we will need about 600 grams of sugar, to sweeten this drink.

  • Paso 1: Sancochar las conchas

Primero haremos todo el trabajo con las parchitas, entonces debemos cortarlas por la mitad para sacar toda la pulpa y reservarla en un recipiente. Las conchas de esta fruta debemos limpiarlas y colocarlas en una olla con suficiente agua, las llevaremos a sancochar por una hora o un poco mĂĄs. No debe quedar sin agua, ya que es importante para licuar mĂĄs adelante.

  • Step 1: Boil the shells

First we will do all the work with the parchitas, then we must cut them in half to remove all the pulp and reserve it in a container. The shells of this fruit we must clean them and place them in a pot with enough water, we will take them to parboil for an hour or a little more. It should not be left without water, as it is important to liquefy later.

  • Paso 2: Hacer el Sirope de Parchita

Para hacer el Sirope empezaremos licuando por pocos segundos la pulpa de la parchita con un poco de agua, para soltarla un poco pero sin que la parte negra se rompa para que no quede amarga. Se debe colar esto para eliminar lo negro, colocamos el liquido amarillo en una olla y lo llevamos al fuego, es ahĂ­ donde comenzaremos colocando el azĂșcar. Hay que estar pendiente cuando este hirviendo porque puede subir mĂĄs de la cuenta y botarse. Esto estarĂĄ listo cuando este con una consistencia de sirope y lo suficientemente dulce.

  • Step 2: Making the Parchita Syrup

To make the syrup we will begin by blending for a few seconds the pulp of the parchita with a little water, to loosen it a little but without breaking the black part so that it is not bitter. This should be strained to eliminate the black part, we place the yellow liquid in a pot and we take it to the fire, it is there where we will begin placing the sugar. It is necessary to be alert when it is boiling because it can rise more than necessary and be thrown away. This will be ready when it has the consistency of syrup and is sweet enough.

  • Paso 3: Licuar

Antes de licuar debemos sacar la pulpa que esta pegada a la concha, se debe botar la piel de la fruta. Esta pulpa es lo primero que colocaremos en la licuadora, luego agregaremos el agua donde sancochamos las parchitas, unos 3 cucharones de agua, no demasiada. Llega el momento de añadir sirope para endulzar y por ultimo 250ML de ron blanco. Todos estos ingredientes deben ser licuados muy bien para que no queden grumos, una vez perfectamente licuado lo llevamos a una botella de vidrio y guardamos en la nevera.

  • Step 3: Blend

Before blending we must remove the pulp that is stuck to the shell, the skin of the fruit must be discarded. This pulp is the first thing we will put in the blender, then we will add the water where we boiled the parchitas, about 3 ladles of water, not too much. It is time to add syrup to sweeten and finally 250ML of white rum. All these ingredients must be blended very well so that there are no lumps, once perfectly blended we take it to a glass bottle and keep it in the fridge.

Esta es mi receta favorita de licor, me encanta el sabor que tiene ya que la parchita es una de mis frutas favoritas y el jugo de parchita es uno de los que mås me gustan. Si les soy sincera, a mas de un amigo mío he pasado de la raya con este licor, siempre dicen que queda muy fuerte pero yo digo que es mentira, si hacen esta receta y no les gusta lo fuerte de la bebida pueden añadir mås jugo de parchita, pero si les soy sincera el chiste es que quede pura de ron, de lo contrario se vuelve agua ya que esto debe ser acompañado de mucho hielo para que sea una perfecta bebida. This is my favorite liqueur recipe, I love the flavor it has because parchita is one of my favorite fruits and parchita juice is one of the ones I like the most. If I am honest, more than one of my friends has gone overboard with this liqueur, they always say it is too strong but I say it is a lie, if you make this recipe and you do not like how strong the drink is, you can add more parchita juice, but if I am honest, the joke is that it should be pure rum, otherwise it becomes water, since this must be accompanied by a lot of ice for it to be a perfect drink.
