This time I will share a beautiful recipe, a dish that is customary in these eastern lands as is A tasty and thick stew of caraota with white bone of garete
A continuación veremos los ingredientes para cocinar este sancocho:
- 2 kilo de hueso blanco de garete.
- Medio kilo de caraotas negras.
- 3 kilo de yuca.
- 1 kilo de auyama.
- 1 kilo de chino.(verdura)
- Aliños surtidos (cebollin, ají dulce, perejil).
- Orégano pequeño,(opcional).
- Sal.
Next we will see the ingredients to cook this stew:
- 2 kilo of white bone of garete.
- Half kilo of black beans.
- 3 kilo of yucca.
- 1 kilo of pumpkin.
- 1 kilo of chino (vegetable).
- Assorted seasonings (onion, sweet bell pepper, parsley).
- Small oregano (optional).
- Salt.
Como primer paso, escogemos la caraotas negras, la lavamos, y la colocamos a cocinar. Luego picamos los huesos de garete, se lavan con suficiente agua y lo colocamos en la olla en la cual vamos a cocinar.
As a first step, we choose the black beans, wash it, and place it to cook. Then we chop the bones of garete, wash it with enough water and place it in the pot in which we are going to cook.
Después de una media hora, empieza a hervir las caraotas y le añadimos orégano pequeño, una receta de la abuela. Al pasar media hora mas, le colocamos orégano pequeño a los huesos blanco de garete. La dejamos hervir por mucho tiempo, para que los huesos se ablande bien.
After half an hour, the beans begin to boil and we add small oregano, a grandmother's recipe. After half an hour more, we add small oregano to the white bones of garete. We let it boil for a long time, so that the bones soften well.
Mientras se cocina las caraotas negras y los huesos blancos de garete, empezamos a lavar y picar los aliños (cebollin, ají dulce, perejil) y se aparta. También picamos las verduras ( yuca, chino, auyama) y se lava muy bien y se reserva aparte. Pasados una hora, se le agrega sal.Las caraotas negras se retiran del fuego, su tiempo de cocción fue de una hora y media.
While the black beans and white bones are cooking, we begin to wash and chop the seasonings (onion, sweet bell pepper, parsley) and set aside. We also chop the vegetables (yucca, chino, auyama) and wash very well and set aside. After one hour, add salt and remove the black beans from the fire, its cooking time was one hour and a half.
Pasados ya dos horas de cocción, se procedió a cambiar de olla, ya que son muchos los ingredientes. Se les agrego los aliños y la verduras, agregando dos cucharichas de sal. Y se deja cocinar, cuestión de que ablande la verdura y espese un poco la sopa. Luego de 20 minutos se le agrego la caraotas negra que ya estaban ablandadas aparte.
After two hours of cooking, we proceeded to change the pot, since there are many ingredients. The seasoning and the vegetables were added, adding two teaspoons of salt. And let it cook, so that the vegetables soften and the soup thickens a little. After 20 minutes I added the black beans that were already softened separately.
Ya cuando la sopa va a estar, se prueba para ver como esta de sabor y se le agrega dos cucharadas mas de sal y se remueve. Logrando tener su color oscuro marrón y un buen sabor. Y ya la sopa esta lista para comer en familia.
When the soup is ready, it is tasted to see how it tastes and two more spoonfuls of salt are added and stirred. Getting its dark brown color and a good flavor. And now the soup is ready to eat with the family.
The cooking time was 3 hours and yields for the whole family and repeat if desired.
