Vegan Pineapple Pancakes Recipe and Food Photography

When life gave me pineapples today, I thought about making vegan Pineapple Pancakes. No eggs and that's better.

It takes extra work to clean and cut pineapples. That is the risk if we have pineapple. But its freshness and uniqueness cannot be denied.

On these pancakes, I don't crush pineapples. I purposely showed the pineapple in its original form. It will look like a beautiful flower shape.

IMPORTANT NOTE: To make Pineapple Pancakes taste good, you must use pineapple that is ripe and tastes sweet.

Sometimes I get pineapple with a sour taste and I use it only for juice.

Let's get started on making Vegan Pineapple Pancakes.

Ingredients

  • 300 ml of all-purpose flour
  • 325 ml of vegan milk, in here I use coconut milk
  • 1 tsp of baking powder
  • 1 tsp of salt
  • 50 ml of chopped brown sugar or coconut sugar

How To Make

- Step 1

Combine flour, baking powder, and salt. Stir well.

Add vegan milk. Stir well.

Add chopped coconut sugar. You have to finely chop the coconut sugar so that it mixes well with the pancakes batter.

Heat the pan. Then start cooking the pineapple chunks first. You can use oil or not, it's your choice.

Add the mixture to the top of the pineapple until the pineapple is covered.

Turn the pancakes carefully and then cook again until done.




- Step 7

Remove, then cook the dough until it's finished.

Serve with the toppings of your choice. Can use coconut cream, or ground cinnamon sprinkles.
