Thanks for everything, but you still didn't answer what I was looking for.
How can I pin up a post within a community?
Or if I am the moderator everything I publish stays up?

You have to be a moderator / admin to do so.
If you are, on steemit.com, there's the option to pin / unpin a post once you open a post, at the bottom:
On steempeak.com, it's the kind of the same:

Create one and add content in the description and as a title, but all the content you had recorded disappeared ... MMM 🤦♂️
