Chicken and Pumpkin Masala Mayhem πŸ— #DashOutSunday #OnAMonday 🍠

So it's not Sunday anymore and on the past Sunday we didn't actually go all out with the cooking and instead did it with leftovers and snacks. Mainly because @tanjakolader had an exam to prepare for on Monday and me.. well, I was just plain lazy. Let's blame it on thesis fatigue.


But in the true spirit of #DashOutSunday we took our pots, pans and spices and went on yet another trip to Asia. This time with more influence from the South part. With many ethnicities from different parts of the world, we are gastronomically blessed in Suriname in terms of the variety of dishes with different styles we can make. This time I went with Curry Masala Pumpkin and Masala Chicken, and while the main ingredient is the same, both definitely don't taste the same.

First of is preparation time of course.


For the chicken: garam masala powder, curry powder, coriander powder, cumin powder, turmeric powder, black pepper, salt, chopped garlic, chopped onions, chopped tomato, chopped chilies and tomato paste.


For the pumpkin: garam masala powder, cumin powder, black pepper, salt, chopped garlic, chopped onions.

Now to get that chicken done. Heat some oil and start with browning the garlic, then adding the onions and chili. After that clear a piece of the bottom of the pot/pan and throw in the cumin, masala, curry, turmeric and coriander and that slightly burn until fragrant (not black). Add tomatoes, tomato paste and mix everything. I added a bouillon cube (which is holy to some cooks in Suriname) for good measure and flavor. Once everything is mixed add the chicken, let it cook a bit, then add water and let it simmer. Salt and black pepper to taste.

The pumpkin is simple compared to that. Heat your oil, brown some garlic and onions along with the masala powder. Then add the pumpkin (which has been cut into blocks) and cook/simmer until soft. Be sure to stir and add water to not let it dry out or burn.

As you can see on Tanja's plate, this goes well with rice. While I do eat rice when the dish requires it, mine doesn't have any, because I stopped participating in the rice-on-everything norm in our country ever since my increasing age doesn't agree anymore with naturally staying fit.

It looks very very good, it really provokes when you see it.
You're a great cook, not all men like to cook, but that's a good point, it also speaks to the fact that you've had a good family background, because not all of them are dedicated to teaching cooking, and besides, I imagine it's something you like to do. We share that same taste for cooking.

Thanks for the compliment. I actually just discovered this passion about 2 years ago, ever since I moved out from my parents. Before that I didn't really cook much. But I like the science of combining ingredients and expirementing with new dishes when it's too expensive in a restaurant.

Cooking didn't use to be something men did, but obviously times have changed for the better 🍻

I was lucky that my mom taught me how to cook, of course, because I am the oldest and I had to take care of my two brothers when she was working, and part of the care was cooking. So it's something I learned very young, I can say that as a child, but as a teenager I was passionate about it, I almost studied to be a chef, almost. But time did not give me the time to do it, however, it is something I still have pending.
Certainly, times have changed.
Living only led you to learn even more, but it is good that you have grasped this way.

Ah, you were also the experimental (oldest) child, just like me.

Having found this passion combined with the goal of retiring early, I am playing with the idea of doing something with food when that time comes. But it's all just loose ideas for now. I wouldn't consider it right now, because of the situation, but it's a possibility for the future.

Yes, it seems that regardless of the part of the world, many realities are similar, regardless of culture, there are certain things that are repeated.

Chicken legging πŸ— πŸ˜† looking good! Malasa powder, that’s a new one for me. Had to go google it. This sounds very interesting though. Like a more flavorful curry. Tomatoe paste hmm ... and what is this bouillon thingy? ( alright, alright back to google πŸ˜†)

Shiiiit, I’m trying to stay away from the rice myself but it’s everywhere here.

The masala is basically a mix of all the other powders, but with cardamom I think, so no worries if you can't find it specifically.

Chicken bouillon cubes are basically concentrated chicken flavor with some salt and msg, and people in Suriname use it as part of the seasoning or added flavor. Some overdo it's usage tho. πŸ˜‚

Ah, yes, rice is a big part of food culture there right.
