Beautiful Sunday + Sublime Sunday

Today is the day that my husband is getting his first dose of vaccination. His appointment is 12pm at The Mines (MIECC).

I made lunch earlier so that he can eat some before getting his shot. First time making this pumpkin chicken rice. Yup, made with my air fryer again.

Before putting everything into the air fryer, I steamed the rice and sliced pumpkin first. Marinated the chicken with light soy sauce, sesame oil, black pepper, mixed herbs and corn starch. Air fried the chicken at 200°C for 10 minutes twice. Then took out the chicken and put aside. Air fried the onion and bell pepper.

Then put everything into the air fryer again to make sure the chicken was cooked thoroughly and the gravy was well mixed into the rice.

Sweet and yummy pumpkin chicken rice. Next time I think I should add some mushroom and egg too so that i can have more colours in the rice. 😋😋😋
